目的了解广州市海珠区食品中致病菌的污染状况,以及在不同食品中的分布,为食源性疾病的监测、预警乃控制能力提供科学依据。方法按国标及2011年广州市食品安全风险监测计划对沙门菌、大肠杆菌O157、金黄色葡萄球菌、单核细胞增生李斯特氏菌、副溶血性弧菌和创伤弧菌进行检测。结果采集食品94份,副溶血弧菌检出8份(8.5%),均在水产品中检出,其中生鱼带菌量最高。结论海珠区市售食品中存在的致病菌主要为水产品中的副溶血弧菌。
Objective To understand the pollution status of pathogens in food in Haizhu District of Guangzhou City and the distribution in different foods so as to provide a scientific basis for the monitoring and early warning of foodborne diseases. Methods Salmonella, Escherichia coli O157, Staphylococcus aureus, Listeria monocytogenes, Vibrio parahaemolyticus and Vibrio vulnificus were detected according to the national standard and the 2011 Guangzhou food safety risk monitoring program. Results A total of 94 food samples were collected and 8 (8.5%) were detected by Vibrio parahaemolyticus, all of which were detected in aquatic products. Conclusion The main pathogens in the food available in Haizhu District are Vibrio parahaemolyticus in aquatic products.
