镰刀菌菌体蛋白是一种由丝状真菌经过生物工程产生的多细胞蛋白质。它不但富含蛋白质,而且必需氨基酸的比例适当,脂肪和胆固醇含量较低,是一种较理想的新食物资源。为深入进行毒理学研究和对人体安全评价提供科学依据,我们用Ames试验、SOS检测系统和枯草杆菌重组修复试验对其诱变性进行了研究。
Fusarium bacteriocin is a multicellular protein that is bioengineered by filamentous fungi. It is not only rich in protein, but also an appropriate proportion of essential amino acids, lower fat and cholesterol, is a more ideal new food resources. In order to provide a scientific basis for further toxicology research and human safety evaluation, we used Ames test, SOS detection system and Bacillus subtilis recombinant repair test to study its mutagenicity.
