在社会经济生活日益发展的今天,由于食品的特殊功能和经济地位,以及近年发生的波及广泛的“疯牛病”、“二恶英”等重大食品安全事件,决定了食品安全问题是各国政府乃至国际社会关注的焦点。经济全球一体化使食品安全问题极易造成国际化。据估计,报告的食源性疾病发病率不到实际发病率的10%,甚至不到实际发病率的1%。伴随现代农业和都市化进程,大量化学制品的使用,一些生物物种的变异以及人类生产、生活活动的频繁,对自然生态环境所带来的负面影响,食品安全的形势会变得更加严峻。当前,国际社会普遍关注的是世界范围内食品安全存在的危机及其产生的原因和防范、控制措施。

With the development of modern agriculture and urbanization, the use of a large number of chemical products, the variation of some biological species, the frequent occurrence of human activities and living activities and the negative impact on the natural ecological environment have made the situation of food safety even more severe. At present, the general concern of the international community is the crisis of food safety in the world, its causes and prevention measures and control measures.
