[目的]了解泉州市食饮具消毒卫生状况及相关影响因素,研究影响餐饮业食饮具卫生质量的原因,为食饮具污染的预防治理,制定相关卫生政策提供依据。[方法〗根据GB14934-94《食(饮)具消毒卫生标准》,对2006年市直辖的餐饮业的食饮具进行监测。[结果]餐饮业监测样品合格率为93.2%(1 808/1 940);不同规模的餐饮业、不同季度、不同类型的食饮具,其检测合格率差异均有显著性。[结论]食饮具卫生问题比较严重,应引起有关部门的高度重视,加大措施进行综合治理。
[Objective] To understand the status of disinfection and hygiene of tableware in Quanzhou and the related influencing factors, and to study the reasons that affect the sanitary quality of tableware in catering industry, and provide the basis for the prevention and control of tableware contamination and the formulation of relevant health policies. [Method] According to GB14934-94 “food (drinking) with a disinfection of health standards”, the municipal food and beverage industry in 2006 directly under the supervision of food and beverage. [Result] The passing rate of the monitoring samples in the catering industry was 93.2% (1 808/1 940). The differences in the detection pass rates among different scale catering industries, different quarters and different types of tableware and drinking appliances were significant. [Conclusion] The hygiene problems of eating and drinking appliances are serious, which should arouse the attention of relevant departments and increase the measures to carry out the comprehensive management.
