目的对南阳市市售油炸、烧烤类食品进行抽样检测,以了解本地此类食品中苯并(a)芘污染状况。方法采用随机抽样的方法,在全市13个县区对油炸、烧烤类食品进行采样调查,检测苯并(a)芘含量。结果共采集样本680份,苯并(a)芘平均含量为0.69μg/kg,超标率为1.18%;其中油炸食品中苯并(a)芘平均含量为0.51μg/kg,超标率为0.48%,烧烤食品中苯并(a)芘平均含量为0.77μg/kg,超标率为1.48%。结论南阳市油炸、烧烤类食品中苯并(a)芘总体污染状况较轻,但个别烧烤食品的检测值很高,应加强监督管理,以保障餐桌食品的安全。
Objective To conduct sampling tests on fried and grilled foods on the market of Nanyang City in order to understand the pollution status of benzo (a) pyrene in such local foods. Methods A random sampling method was used to sample fried and grilled foods in 13 counties in the city to test the content of benzo (a) pyrene. Results A total of 680 samples were collected, the average content of benzo (a) pyrene was 0.69μg / kg, and the exceeding standard rate was 1.18%. The average content of benzo (a) pyrene in fried foods was 0.51μg / kg, %, The average content of benzo (a) pyrene in grilled food is 0.77μg / kg, and the exceeding standard rate is 1.48%. Conclusion The overall pollution of benzopyrene in fried and grilled food in Nanyang City is relatively mild, but the detection value of individual grilled foods is very high. Supervision and management should be strengthened to ensure the safety of table foods.
