目的探讨含益生菌类食品的管理重点。方法对在我国销售的含益生菌类食品的主要生产企业进行问卷调查,检索分析FAO/WHO、IDF、欧盟、美国、日本、中国等国际组织及国家有关含益生菌类食品的管理资料。结果我国销售的含益生菌类的食品主要有乳粉、酸奶、保健食品等,益生菌的相关信息标识不统一。国际上关于含益生菌类食品的管理方式多样。结论含益生菌类食品在食品市场上方兴未艾。益生菌在食品中的安全利用和规范管理是食品安全领域的关注热点之一,规范益生菌的概念、评估要求与程序、生产操作、标签标识、市后监测及评估等方面是管理的重点。
Objective To explore the key management of probiotics-containing foods. Methods A questionnaire survey was conducted on major manufacturers of probiotics products that were marketed in China, and the data on the management of probiotics-containing foods by FAO / WHO, IDF, EU, USA, Japan, China and other international organizations and countries were searched and analyzed. Results The products containing probiotics in our country are mainly milk powder, yogurt, health food, etc. Probiotics related information identification is not uniform. There are many international management methods for probiotics-containing foods. Conclusion Probiotics foods are on the rise in the food market. Probiotics in food safety and standardized management is one of the hot spots in the field of food safety, regulate the concept of probiotics, assessment requirements and procedures, production operations, labeling, post-market monitoring and evaluation and other aspects of management is the focus.
