目的对2013-2014年太原市部分餐饮单位监督量化分级评定结果进行分析,为今后指明监督检查重心和进一步完善监督动态等级评定提供参考依据。方法抽取664份监督量化评定表,按不同餐饮单位的类型、评定内容和项目合格程度区分比较和分析。结果评为优秀和良好两个等级的差距不大,评为一般等级的比例较少;许可管理、设施设备、加工制作和清洗消毒等四个项目合格率较高,人员管理和采购贮存两个项目合格率较低。结论餐饮行业良莠不齐现象和在食品安全各个管理环节的厚此薄彼现象仍然存在,针对评定等级为一般的小吃店和合格率较低的人员管理和采购贮存检查内容,仍需要在今后改进检查方式,加大监督力度。
Objective To analyze the quantification and grading assessment results of some catering units in 2013-2014 in Taiyuan, and to provide reference for future designation of the center of gravity of supervision and inspection and further improvement of the dynamic rating of supervision. Methods A total of 664 supervised quantitative evaluation tables were drawn, which were divided and analyzed according to the types of catering units, the contents of assessment and the degree of project conformity.
