本文以鼠伤寒沙门氏菌致突变试验研究了安徽歙县一级绿茶的抗致突变作用。绿茶水浸液可抑制甲基脲和亚硝酸钠的反应,阻断亚硝胺类致癌物的生成,并抑制已生成的亚硝基甲基脲的致突变性;可抑制苯并(a)芘及黄曲霉毒素B_1 经大鼠肝S9 活化的致突变性;显著地抑制过氧化羟基异丙苯及四氯化碳诱变的大鼠肝微粒体脂质过氧化作用。本文还报告了D-儿茶素等茶酚对亚硝化反应、致突作用及脂质过氧化的影响。
In this paper, the mutagenicity test of Salmonella typhimurium was used to study the anti-mutagenic effect of first grade green tea in Juxian, Anhui Province. Green tea infusion can inhibit the reaction of methylurea and sodium nitrite, block the formation of nitrosamines carcinogens, and inhibit the mutagenicity of the nitrosourea generated; can inhibit the benzo (a) Pyrene and aflatoxin B_1 by rat hepatic S9 activation; significantly inhibit lipid peroxidation induced by cumene hydroperoxide and carbon tetrachloride in rat liver microsomes. The paper also reports the effects of D-catechins and other phenols on nitrosation, mutagenicity and lipid peroxidation.
