[目的]了解滕州市餐饮单位食(饮)具消毒效果,确定食品卫生监督的重点,防止食源性疾病的发生、传播和流行。[方法]2009年9~12月,对滕州市辖区内217家餐饮单位消毒后的3 127份食(饮)具,采用大肠菌群快速检测纸片法进行检测,依据GB 14934-94《食(饮)具消毒卫生标准》进行采样、评价和分析。[结果]检测217家餐饮单位的3 127份食(饮)具,合格的2 337份,合格率为74.74%;国有、集体与个体餐饮单位,城区与乡镇餐饮单位,大份与小份食(饮)具,电子消毒柜与药物蒸汽消毒,食(饮)具合格率差异均有统计学意义(P<0.01)。[结论]2009年滕州市不同性质餐饮单位食(饮)具消毒效果较好。
[Objective] To understand the disinfection effect of food (drink) in catering units in Tengzhou, to determine the key points of food hygiene supervision and prevent the occurrence, spread and epidemic of foodborne diseases. [Method] From December 2009 to December 2009, 3 127 samples of food (drink) from 217 catering units in Tengzhou were detected by the method of rapid detection of coliform bacteria based on the method of GB 14934-94 (Drinking) with disinfection health standards "for sampling, evaluation and analysis. [Result] The surveyed 3 127 food and drink items of 217 food and beverage establishments and 2 337 qualified ones with the pass rate of 74.74%. The state-owned, collective and individual catering units, urban and rural catering units, large and small food (Drinking) with electronic disinfection cabinet and drug steam sterilization, food (drinking) with the passing rate differences were statistically significant (P <0.01). [Conclusion] The food (drink) in different catering units in Tengzhou in 2009 had a better disinfection effect.
