竹篙薯是泰和县的特产。因其在栽培时,地上需插竹杆让茎叶向上攀缘生长,地下要挖条坑,使薯块能向地下伸长,结出的薯块,形似竹杖,故名“竹篙薯”。 竹篙薯属薯芋科山药属长山药种的多年生草本植物。据光绪四年泰和县志记载,它是明代弘治年间采集高行乡(桥头乡)一带山区的野生山药,在赣江两岸冲积河谷平原种植,经过近五百年的栽培驯化和人工选择而成的食用长山药新品种。解放以后,栽培面积逐年增加,全县历年种植面积1000亩左右,年产量400万斤左右。万合乡湖尾一带的亩产高达8000余斤。
