本文对江苏省南北稻区主要粮食作物稻米和小麦中铜、锌、镍、铅、镉、砷、铬、汞、氟等九种元素进行调查和测定。132个样品采自18个县市。通过四方面的质量控制,保证所用测定方法的可靠性和分析结果的准确性。配合采用统计学四种检验法(W检验和X~2检验等)来判别测定数据的分布类型和含量差异,统计出苏南,苏北不同地区九种元素的背景值。与国外文献报道的含量水平相比较,发现稻米中铅和镍,小麦中铜和锌的含量略高,其他元素都在文献报道的范围以内。铅、镉、汞、砷四种有毒元素的含量均低于食品卫生标准,对人畜无害。
In this paper, nine elements of copper, zinc, nickel, lead, cadmium, arsenic, chromium, mercury and fluorine in the rice and wheat, the main grain crops in the north and south of Jiangsu Province, were investigated and determined. 132 samples were collected from 18 counties. Through the four aspects of quality control, to ensure the reliability of the determination method used and the accuracy of the analysis results. Statistical analysis of the four test methods (W test and X ~ 2 test, etc.) were used to determine the distribution type and content difference of the measured data, and statistics were made on the background values of nine elements in different areas of southern Jiangsu and northern Jiangsu. Compared with the contents reported in foreign literature, the contents of Pb and Ni in rice and the contents of Cu and Zn in wheat were found to be slightly higher than those reported in the literature. The content of four toxic elements of lead, cadmium, mercury and arsenic is lower than the food hygiene standard, which is harmless to humans and animals.
