目的了解张家港市食品污染现状,为相关食品的监管提供依据。方法在覆盖全市的食品污染物监测网点内抽检各类食品,开展微生物、重金属及有害元素、真菌毒素、食品添加剂和非法添加物等项目的检测。结果共抽检28类食品2 829份,合格2 659份,总合格率为93.99%;主要不合格食品为非发酵豆制品、粉丝粉条、鱼糜制品、蛋及蛋制品、畜类内脏、食用菌、面制食品、水发食品和酱腌制蔬菜等,合格率均低于95%,其中非发酵豆制品和粉丝粉条合格率最低,分别为5.88%和39.89%;主要不合格项目是细菌总数、大肠菌群、铅、汞、含铝添加剂(以铝计)、甜蜜素、亚硝酸盐和吊白块等。结论张家港市食品污染总体水平较低,但非发酵豆制品的微生物污染,畜类内脏、蔬菜等食品的重金属污染,部分添加剂和违法使用物质的超范围或超量使用等现象需引起重视,应加强相关领域的监管力度并开展针对性的宣教培训。
Objective To understand the status quo of food contamination in Zhangjiagang City and provide the basis for the regulation of related foods. Methods The food poisoning monitoring network covering the whole city sampled all kinds of foodstuffs, and carried out tests on such items as microorganisms, heavy metals and harmful elements, mycotoxins, food additives and illegal additives. Results A total of 2829 samples of 28 kinds of food were obtained, of which 2 659 were qualified, with a total pass rate of 93.99%. The main unqualified foods were non-fermented soybean products, vermicelli noodles, surimi products, eggs and egg products, The unqualified rate of the non-fermented soybean products and vermicelli noodles is the lowest, accounting for 5.88% and 39.89% respectively. The main unqualified items are the total number of bacteria, Coliform bacteria, lead, mercury, aluminum additives (aluminum), sodium cyclamate, nitrite and hanging white pieces. Conclusion The overall level of food contamination in Zhangjiagang City is relatively low. However, the non-fermented soybean products should be given more attention due to such phenomena as microbial contamination, heavy metal pollution in livestock offal, vegetables and other foods, over-range or over-use of some additives and illegal substances, and should be emphasized Related areas of supervision and carry out targeted mission training.
