1997~ 1999年在浙江安吉县进行了在常规施用有机肥和氮肥的基础上 ,配合施用磷钾硼肥对红竹笋营养品质效应的研究。结果表明 :N、NPK、NPKB处理与 CK比较均能显著提高红竹笋的游离氨基酸、还原糖和多酚类含量 ,各处理品质含量高低排列依次为 :NPKB>NPK>N>CK。蛋白质含量以 N处理最高 ,CK最低 ;脂肪含量恰与蛋白质相反。NPK与 NPKB处理对竹笋的维生素 C含量影响不明显。相关分析证明 ,竹笋的游离氨基酸、还原糖含量与笋体的 P、K、B关系显著 ;多酚类含量与笋体P、B关系显著 ;蛋白质含量与笋体 N关系极显著 ;脂肪含量与笋体 N关系呈负显著相关
From 1997 to 1999, on the basis of conventional application of organic manure and nitrogen fertilizer in Anji County, Zhejiang Province, the effect of applying phosphorus, potassium and boron fertilizers on nutritional quality of red bamboo shoots was studied. The results showed that the contents of free amino acids, reducing sugars and polyphenols of N, NPK, NPKB and CK were significantly increased, and the order of NPK> NPK> N> CK was high and low. Protein content was the highest in N treatment, CK lowest; fat content exactly the opposite of the protein. The effect of NPK and NPKB on the vitamin C content of bamboo shoots was not obvious. Correlation analysis showed that the content of free amino acids and reducing sugars in bamboo shoots were significantly correlated with P, K and B of bamboo shoots; the content of polyphenols was significantly correlated with P and B of bamboo shoots; the correlation between protein content and shoot N was significant; The relationship between shoot N was negatively significant
