目的了解豫北地区中小学校食堂从业人员的食品安全知识知晓情况和卫生行为现状,为规范学校食堂管理和提高服务质量提供依据。方法分层随机抽取豫北地区61所中小学校食堂从业人员1 236名,进行现场问卷调查,并当场回收。结果豫北地区中小学食堂从业人员的食品安全知识总体知晓率65.63%,城市学校为69.91%,明显高于农村学校的62.60%(P<0.01)。能保持“不留长指甲、不涂指甲油”和“不用裸手拿取直接入口的食品”行为在城市和农村学校所占比例分别为98.82%,97.65%和95.18%,96.69%;“不将个人衣物及私人物品带入食品处理区”行为的比例较低,城市和农村分别为78.82%,73.83%。结论中小学校食堂从业人员的食品安全知识和行为水平有待进一步提高,尤其应加强农村学校食堂从业人员食品卫生知识培训。
Objective To understand the food safety knowledge and status of health behaviors among elementary and junior high school canteen employees in Yubei area and to provide basis for regulating school cafeteria management and improving service quality. Methods Totally 1,236 employees in primary and secondary schools canteens in Yibei district were randomly selected and stratified to carry out on-site questionnaires and collect them on the spot. Results The overall awareness rate of food safety in elementary and junior high school canteens was 65.63% in Henan Province, 69.91% in urban schools, significantly higher than 62.60% in rural schools (P <0.01). The percentage of urban and rural schools that can maintain “no long fingernails, no nail polish” and “no direct access to food without naked hands” were 98.82%, 97.65% and 95.18% respectively, and 96.69% %; The proportion of “not bringing personal clothes and personal belongings into the food processing area” was low, with 78.82% and 73.83% in urban areas and rural areas respectively. Conclusion The knowledge and behavior of food safety of primary and secondary school canteens need to be further improved. In particular, knowledge of food hygiene in rural school canteens should be strengthened.
