萝卜存贮期间出现糠心,原因大都有三个方面:一是环境温度较高。萝卜贮藏的适宜温度为1~3℃,若超过3℃,萝卜易继续萌芽生长,细胞组织的水分,养分会向生长方面转移,致使间隙迅速扩大,结构松驰。二是采收,装运过程造成破皮、裂痕等伤口,以致呼吸作用加强,养分消耗过大。三是存放环境干燥。较理想的空气湿度为90~95%,低于90%易促进萝卜自身的蒸腾作用,导致不断脱水,细胞组织松软。上述情况中,萝卜在入贮前如果没有切除掉茎盘(萝卜顶)时往往会更加严重。
Radish kernels appear during storage, mostly for three reasons: First, the higher the ambient temperature. Radish storage temperature 1 ~ 3 ℃, if more than 3 ℃, radish easy to continue budding growth, cell tissue moisture, nutrients will shift to growth, resulting in the rapid expansion of the gap, the structure of relaxation. Second, harvesting, shipping process caused by broken skin, cracks and other wounds, resulting in enhanced respiratory effects, nutrient consumption is too large. Third, the storage environment is dry. The ideal air humidity is 90 ~ 95%, less than 90% easy to promote the transpiration of radish itself, resulting in continuous dehydration, loose tissue. In the above case, the radish tends to be more severely contaminated without removing the stem (radish top) prior to storage.
