目的确保第十届中国艺术节的食品安全,探索HACCP体系在重大活动餐饮食品安全保障中的应用。方法参照《危害分析与关键控制点(HACCP)体系及其应用指南》(GB/T19538-2004)推荐的原理与程序,以接待第十届中国艺术节演职人员的2家餐饮单位为研究对象,建立餐饮HACCP体系。结果根据生产工艺确定原料采购验收、烹饪、餐饮具的清洗消毒保洁、食品摆台和操作人员的健康卫生为此次餐饮操作过程的5个关键控制点。结论 HACCP系统运用于重大活动食品安全保障工作,是一种行之有效的管理方法。
Objective To ensure the food safety of the 10th China Art Festival and to explore the application of HACCP system in food safety and security of major events. Methods According to the principles and procedures recommended by the Guideline for Hazard Analysis and Critical Control Point (HACCP) System and Its Applications (GB / T19538-2004), two catering units receiving the 10th China Art Festival were selected as the research objects , Establish food HACCP system. Results According to the production process, the procurement and acceptance of raw materials, the cleaning, disinfection and cleaning of cooking appliances and tableware, the food hygiene table and operator’s health and hygiene were determined as the five key control points of the catering operation process. Conclusions The HACCP system is applied to the food security of major activities and is an effective management method.
