在我国的烹饪专职教学中,教学实践与实际生活中的餐饮行业需要的技能不符,造成社会烹饪人才脱节。在新型的烹饪教学实践中,应根据现代餐饮业的发展,创新烹饪教学方式。本文指出了烹饪专职院校在实践教学中的现状,以及烹饪教学实践中需要遵循的几个原则,并提出相应的烹饪教学实践方法的建议。
In our country’s teaching of full-time cooking, teaching practice and actual needs of the catering industry does not match the skills, resulting in social cooking talent out of line. In the new cooking teaching practice, we should innovate the cooking teaching method according to the development of modern catering industry. This paper points out the status quo of cooking full-time colleges in practice teaching and several principles to be followed in the cooking teaching practice and puts forward some suggestions on how to practice cooking instruction.
