素食者须多吃粗粮,种子类,黑麦、黑豆等,以此提供更多的营养物质来满足生理上的各种需要。须用高蛋白的豆类、坚果等食物作为蛋白质供给源。将几种含有氨基酸不同的食物混合作用,使它们之间相对不足的氨基酸相互补偿,以接近人体的需要,避免人体必需氨基酸的缺乏。例如,吃豆类时吃些玉米或大米:吃谷类时选择一些豆类或绿叶蔬菜:吃花生时吃些面粉。
