INTRODUCTION 1. The status of the plum processing industry Plum has been an important fruit tree in the United Kingdom for centuries. But in the last 30 years there has been a dramatic decline in commercial production. In 1947 plum cultivation area of 19000 hectares, but by 1977 only 5 thousand hectares. The main reason is the unstable output. In the past 15 years, the yield variation ranged from 2 to 11 tons per hectare. Most plums are sold in the domestic market. However, about 20% to 30% are used to make jams and cans, not for fermentation or dried fruit.
