茶叶化学是研究茶树各器宫的化学成分,研究茶树生长、发育、遗传、变异和制茶过程中物质、能量、信息三者的变化,协调、拮抗、矛盾统一等规律的一门科学。它包括了茶叶成分化学、茶树生物化学、制茶化学和茶叶品质化学等内容,是普通化学、生物化学、物理化学渗透到栽茶和制茶中的一门边缘学科。它能为茶树栽培、品种选育、制茶学和茶叶品质鉴定提供有关化学和生物化学的理论和依据。
Tea chemistry is the study of the chemical composition of the various organs of the tea plant Palace, a study of the laws of change, coordination, antagonism, contradiction and unity of the growth, development, heredity, mutation, and material, energy, and information of the tea plant during its development. It includes chemical composition of tea, tea tree biochemistry, tea chemistry and tea quality chemistry and other content, is an ordinary chemical, biochemical, physical and chemical penetration of tea cultivation and tea in an edge discipline.
