“佝(驼)背老公公,胡须一独鬃,杀底儿冇血,烫亡红咚咚”。这是温州民间的虾儿“谜”语。虾肉质鲜嫩可口,营养丰富,含钙特高,是温州人喜欢的日常菜肴。温州气候温和、四季分明,傍山近海,江河纵横,虾类品种较多且优良,本地出产有:蚕虾、白虾、赤虾、红虾、河虾、江虾、虾扁虾、条虾、炊虾等。近年来还养殖了对虾、基围虾、小龙虾等。虾类是喜庆筵席的首选海(河)鲜之一,它色泽鲜艳、形态美观,摆动物盘,花色盘都离不开它。许多高级菜肴、点心都需要虾仁、虾米作配料和镶馅主料,如玉带海参、菠萝虾球、七星鱼丸、面包虾环、虾饺等菜点。
