挂面制做简单,食用方便,是人民群众比较喜爱的传统食品。四川省近年来随着农业生产的发展,配售给城镇人民的小麦制品比例越来越大,由于人们食用的习贯,夏秋季产量大,销量小,而冬季销量大,产量小的产销矛盾十分突出。随着气调贮藏的普遍应用,各地先后开展了自然密闭降氧,通风干燥、“双低”等贮藏方式贮藏挂面的试验,但贮藏后能否保持挂面的食用品质是人们很关注的问题,为此四川省粮食厅于去年组织有关科研、教学单位及基层仓贮部门共同协作开展了挂面安全渡夏贮藏技术的科研项目。根据四川省的气候特点,分别在重庆、宜宾、成都、乐山、绵阳、南充等六地市进行了实仓试验。贮藏方式有自然密闭降氧,充 N_2,充 CO_2,通风干燥,“双低”,加丁茴香作抗氧
Noodle making simple, easy to eat, is the people’s favorite traditional food. In recent years, with the development of agricultural production in Sichuan Province, the proportion of wheat products sold to urban residents has been increasing. Due to people’s consumption habits, large output in summer and autumn and small sales volume, large sales volume in winter and small output and production contradiction prominent. With the widespread application of controlled atmosphere storage, various localities successively carried out the tests of storing noodles with natural closed oxygen, ventilated and dry, and “double low” storage methods. However, it is a concern for people to maintain the quality of dried noodles after storage. To this end, Sichuan Province Food Department organized last year’s scientific research, teaching units and grassroots warehousing departments work together to carry out the noodle security crossing summer storage technology research projects.
