本文选用2007年长春产水分24.7%马齿形黄玉米为原料,测定自然晾晒、热风干燥和真空干燥玉米品质指标,并进行浸泡试验,引入浸泡模型,进而探索干燥玉米的品质与浸泡模型参数的关系。结果表明,自然晾晒、真空干燥对玉米品质破坏程度较小。干燥温度越高,玉米裂纹率、电导率越大,发芽率越低,浸泡玉米含水量越小,可溶性固体溶出物损失量越大。
In this paper, 24.7% horse-shaped yellow maize with water content of 24.7% was used as raw material in this paper. The natural drying, hot air drying and vacuum drying corn quality indexes were selected. The soaking test was carried out and the soaking model was introduced to explore the quality of dried corn and parameters of soaking model relationship. The results show that natural drying, vacuum drying less damage to the quality of corn. The higher the drying temperature, the higher the corn crackle rate and conductivity, the lower the germination rate. The smaller the water content of soaked maize, the greater the loss of soluble solid matter.
