Flavonoids are a large family of vitamin P therapeutic agents. They prevent cardiovascular disease by reducing capillary permeability and fragility. This effect may be related to their antioxidant function, as impaired oxidative cell membranes lead to cardiovascular disease. Polyunsaturated fatty acids present in the cell membrane are readily oxidized by peroxidation that is catalyzed by enzymes or performed automatically by a free radical chain reaction as shown on the right. The initiation phase of lipid peroxidation (Ⅰ) can be induced by free radicals (O_2 ~ - OH) and singlet oxygen (~10_2) generated in biological system. Therefore, lipid peroxidation may be induced in the phase
