目的了解沈阳市各类食品中常见食源性致病菌污染情况,为食品安全风险评估及预警提供依据。方法依据卫生部下发的《国家食源性致病菌监测工作手册》要求,随机抽取11类、444份样品进行食源性致病菌的监测。结果 2011-2012年监测的444份样品中,检出食源性致病菌株35株、总检出率为7.9%;其中致病菌中副溶血性弧菌检出率最高11.3%、熟肉制品类食品致病菌的检出率最高18.6%、采自市场、商店、专卖店食品的致病菌检出率最高14%。结论沈阳市市售的食品存在食源性致病菌的污染,熟肉制品、生熟动物性水产品、即食熟制米面制品是高风险食品,超市食品相对安全,应加强对重点致病菌、重点食品、重点食品消费场所的监测与监管,控制食源性疾病的发生。
Objective To understand the pollution of common food-borne pathogens in various kinds of food in Shenyang and to provide basis for food safety risk assessment and early warning. Methods According to the “Handbook of Surveillance of Food-borne Pathogenic Bacteria” issued by the Ministry of Health, 11 types and 444 samples were randomly selected to monitor food-borne pathogens. Results Among the 444 samples monitored in 2011-2012, 35 strains of food-borne pathogens were detected with a total detection rate of 7.9%. The detection rate of Vibrio parahaemolyticus among pathogenic bacteria was the highest, 11.3% The detection rate of pathogenic bacteria in foodstuffs is up to 18.6%. The detection rate of pathogenic bacteria in foodstuffs collected from markets, shops and specialty stores is up to 14%. Conclusion Food contaminated by food-borne pathogenic bacteria exists in Shenyang City. Cooked meat products, raw and cooked animal aquatic products, ready-to-eat cooked rice products are high-risk foods. The food in supermarkets is relatively safe.
