湖北蕲春县青石镇郭志雄来信说:一年前,我承包了一个油坊。从农民那里收来的菜籽有好有坏。坏的主要指那些放倒后遇雨浸过水的。而且碍于情面,有时明知菜籽质量差,还不能不要。这样,榨出的菜油就出了以下问题:一是菜油倒入锅里后,还未烧开表面就覆盖厚厚一层泡沫,直往上涨,若不立即停火,就会溢出锅外;二是炸东西时,将食物一投入,锅里的油立即暴沸,油面上升,一不小心就溢出锅外。这些问题不解决就会影响生意,我非常着急,但又不知怎样解决。
