一、提高水稻品质的育种目标目前,一般栽培水稻品种,旦白质含量只6-8%,仅为大豆旦白质的1/5左右,比玉米、高梁低8~4%,比小麦、大麦低4-5%。稻米旦白质含量虽低,但就品质而言,却比小麦、玉米显著优越。这主要是因为它的氨基酸组成比较平衡,人体所必需的氨基酸,如赖氨酸、苏氨酸等含量较多。如赖氨酸在稻米旦白质中的含量为4%,在各种谷物中居于前列,这是稻米旦白质的突出优点。据分析其营养价值与大豆旦白质相当,也与牛肉旦白质相近似。因此,改良水稻品质的重点是在尽量不改变其原有氨基酸组成的情况下,尽力提高其旦白质含量。
