彭祖因制羹献尧帝,被后人奉为烹饪行业的祖师爷。彭祖菜是徐州饮食文化的重要组成部分,是由彭祖及其再传弟子创作的菜肴,它有着古老的传统技艺和调味工艺,还有养生作用,长盛不衰。如彭祖用“雉羹”治好了尧帝的厌食症;“羊方藏鱼”开创了“鱼”“羊”为“鲜”之先例;食疗菜“麋角鸡”、“云母羹”可谓别具一格,这些都说明彭祖对食性有一定的研究。彭祖菜的另一特点,是彭祖创制并留传下来的烹饪行业的“爨 Peng ancestors offer Yao Emperor, was later regarded as cooking industry ancestor.
