养麦为蓼科一年生草本植物,营养价值很高,除含有蛋白质、碳水化合物和脂肪外,还含钙、磷、铁等微量元素以及柠檬酸、草酸、苹果酸等有机酸。它的籽粒除供食用外还可作药,用于治疗高血压、糖尿病和青光眼等多种疾病。它的茎秆柔嫩,含有丰富的蛋白质和碳水化合物,是一种优质的饲草绿肥,荞麦还是我国三大蜜源作物之一。 荞麦适应性很广,全国均有分布,对土壤要求不很高,稻茬地、瘠薄地都能种植。据耐盐性测定,土壤含盐量在0.1%时荞麦生长正常,0.2%时生长受抑制,0.3%时不能出苗
