梁实秋先生在《雅舍谈吃》中写道:“冬笋最美。过年的时候,若是以一蒲包的冬笋一蒲包的黄瓜送人,这份礼不轻,而且也投老饕之所好。我从小最爱吃的一道菜,就是冬笋炒肉丝,加一点韭黄木耳,临起锅浇一勺绍兴酒,认为那是无上妙品――但是一定要我母亲亲自掌勺。”在他看来,冬笋是食用竹笋中的最美。经过冬笋略带羞涩的调味,肉的香,笋的鲜,酒的醇,全部诗意呈现,热气腾腾中,活色生香,让人妙不可言。尤以母亲炒的最好吃,出味的香,是每年冬季舌尖上的美味享受。
