[目的]了解江苏省海安县居民食用河豚鱼的相关知识、态度和行为(KAP)。[方法]对分层随机抽样所得的调查对象采用自制的食用河豚鱼的KAP问卷进行调查。[结果]在1086调查对象中,河豚鱼的食用率高达92.4%,79.6%能区分河豚鱼与普通鱼类,97.9%支持食用养殖河豚鱼,82.7%支持禁止食用野生河豚鱼。以得分10分为满分计,医务人员(8.9分)和厨师(8.1分)掌握较高的河豚鱼食用知识,而农民(5.3分)和学生(3.7分)则缺乏这方面知识。[结论]海安县居民普遍食用河豚鱼并初步具备了相关的知识,但食用河豚鱼的相关知识、态度和行为在各人群中不一致。本调查为养殖河豚鱼的安全利用提供了依据。
[Objective] To understand the knowledge, attitude and behavior (KAP) of the puffer fish inhabitants in Haian County, Jiangsu Province. [Method] The questionnaires of self-made edible globe puffer fish were collected from the stratified random sampling. [Result] In the survey of 1086, the consumption rate of puffer fish reached as high as 92.4%. 79.6% of the puffer fish could distinguish puffer fish from ordinary fish, 97.9% support puffer fish for food and 82.7% support the ban of wild puffer fish. With a score of 10 out of 10 points, the medical staff (8.9 points) and chef (8.1 points) had a higher knowledge of puffer fish consumption, while farmers (5.3 points) and students (3.7 points) lacked this knowledge. [Conclusion] The residents of Hai’an County generally consume puffer fish and initially have relevant knowledge, but the relevant knowledge, attitudes and behaviors of consuming puffer fish are not consistent among different groups. The survey provided the basis for the safe utilization of cultured puffer fish.
