脱氧雪腐镰刀菌烯醇(DON)又名致吐毒素,是广泛存在于谷类中的一种霉菌毒素,属于单端孢霉烯类毒素。既往研究多数用食品加工方法去除谷物中污染的毒素,小麦经碾磨加工后,毒素主要分布于麦麸中,面粉中含量减少。由于通常在小麦磨粉前需加水“软化”,因此,作者试图在水中加入适量的化学试剂观察对小麦中DON的影响。本文报导了用污染DON的小麦磨粉时,加入不同剂量的化学试剂以及磨制的面粉经烘烤加工后对DON的影响。
Deoxynivalenol (DON), also known as toxin, is a mycotoxin widely found in grains and belongs to the trichothecene toxoid. Previous studies mostly used food processing methods to remove toxins contaminated in cereals. After milling of wheat, the toxins were mainly distributed in wheat bran and the content of flour was reduced. Since water is usually “softened” before wheat flour is milled, the authors attempted to observe the effects of DON on wheat by adding an appropriate amount of chemical reagent to the water. This article reports the effect of DON on contaminated DON wheat flour by adding different dosages of chemical agents and ground flour after baking.
