据《中外食品·食品技术》报道,食盐是一种功能强大、应用广泛的食品添加剂,适量添加不但可以增强风味、稳定结构,还对维持生命的正常活动具有至关重要的作用。尽管食盐具有如此重要的作用,但现在食品科学家却在想尽各种办法去尽量降低食盐的用量。因为诸多医学实验表明,过高的钠盐摄入量会增加高血压、心血管疾病的患病风险。关于低钠饮食的倡导已经有很多年了,政府、公共卫生组织、食品生产者都在降钠方面做出了诸多努力。
According to the “Chinese and Foreign Food and Food Technology” report, salt is a powerful and widely used food additives, the right amount can not only enhance the flavor and structure, but also plays a vital role in the normal life-sustaining activities. Although salt has such an important role, food scientists are now trying to find ways to minimize salt consumption. Because many medical experiments show that excessive sodium intake will increase the risk of hypertension, cardiovascular disease. Advocates of the low-sodium diet have been around for years, and governments, public health organizations, and food producers have done much to reduce sodium.
