With the reform and opening up, the development of market economy, retail and cooked food businesses are gradually increasing, management methods and scale are constantly changing, and product hygiene quality control is increasingly important. In order to understand the hygiene condition of retail cooked food in Hongkou District and explore the harmful factors that affect the quality of retail cooked food, the author conducted a survey on the retail cooked food status of 34 state-owned, foreign-funded, private-owned and self-employed enterprises in Hongkou District in April 1999.
