用什么来下酒?这是一门大学问。花生米最普遍,但是我认为这是最单调和最没有想象力的下酒菜,叫我吃花生,我宁愿“白干”。我反对的只是吃现成的花生,偶尔在菜市场看到整颗新鲜的落花生,买上一两斤,用盐、糖、五香和大蒜煮熟剥壳吃,又另当别论。自制红烧牛肉,当然是上等的下酒菜,但太花费时间。要是有闲暇来准备,那花样可真不少:炸小黄花鱼、芋头蒸鹅、酱鸭舌……举之不尽。花钱花工夫的下酒菜,总觉得不够亲切。
What to drink? This is a university asked. Peanuts are the most common, but I think this is the most monotonous and the least imaginative appetizer, asking me to eat peanuts, and I would rather “dry white.” I object only to eat ready-made peanuts, and occasionally in the vegetable market to see the whole fresh peanuts, buy a couple of pounds, with salt, sugar, spiced and garlic cooked peeled eat, another matter. Home-made braised beef, of course, is the finest appetizer, but it takes too much time. If you have time to prepare, then the pattern is quite a lot: fried yellow croaker, taro steamed geese, sauce, duck tongue ... endless. Spending money on wine, always feel not warm enough.
