餐饮业就餐人数多,就餐人员流动性大,顾客的健康状况复杂,餐用具容易成为经口传播传染病的传播媒介。通过对餐用具的清洗消毒,可去除或杀灭粘附在餐用具上的病菌和病毒,防止疾病的传播。因此,餐用具消毒对防止传染病的发生和传播,保障人民身体健康,起到积极的作用。《餐饮业和集体用餐配送单位卫生规范》对餐用具的清洗、消毒、保洁设施作出了明确规定。
