肠原性紫绀症,是一种以高铁血红蛋白症为主的类似食物中毒的疾病,我省民间俗称“乌咀病”.根据现有文献所载,认为肠原性紫绀症系因为含有硝酸盐的菜类食物,在某些情况下由于硝酸盐还原菌的作用,在体外或体内迅速形成大量的亚硝酸盐,亚硝酸盐经肠道吸收入血循环,遂引起临床上以高铁血红蛋白症为主的中毒症状.此种发病过程亦可称为亚硝酸盐中毒. 我所曾与江西省卫生防疫站、江西医学院等有关单位在某些发病地区进行肠原性紫绀症的有关卫生学流行病学调查、化学及微生物检验,并结合开展防治研究工作.
