蔬菜和水果是人们日常膳食中的重要食品。两者的营养特点类似,特别是矿物质的含量十分丰富,除含有铁、铜、锌、钴、钼、氟、锰等微量元素外,它们都含钙、磷、钾、钠等成碱性元素,因而在维持体内酸碱平衡中起重要作用。就膳食结构而言,蔬菜与水果是我国人民摄入维生素的主要来源,但是很多人对吃蔬菜、水果和维生素之间存在一些片面认识,需作一些说明。首先,蔬菜、水果不能代替维生素制剂。
