文章以自动氧化油脂简便的定性和定量分析为目的,采用高效液相色谱法对过氧化物的定量分析进行研究。在试样通过RI检测器时不论构成的脂肪酸如何,均能检出未氧化的甘油酯为1个峰,过氧化甘油酯有3个峰,并且从未氧化的峰中能够很好地分离出来。其中可以得出结果并确认:过氧化物峰面积分率与试样中的POV间成直线关系,受试样中的脂肪酸组成的影响,不饱和的程度越高斜率就越小。将过氧化甘油酯的3个峰的成分分别提取后可以求出每个峰面积分率的过氧化物的量。根据这一点可以算出修正的峰面积分率,与POV关系进行研究,结果可以确认它们之间不随油脂脂肪酸组成的变化有着同一直线关系。以这条直线作为校正曲线,将各种自动氧化油脂的POV经HPLC分析结果求出与采用电位差滴定法测定的POV有着良好的一致性。
The purpose of this paper is to analyze qualitatively and quantitatively the auto-oxidation lipids, and to study the quantitative analysis of peroxide using high-performance liquid chromatography. The unoxidized glycerides were detected as one peak irrespective of the constituent fatty acids when the sample passed through the RI detector. The glycerol triglyceride had three peaks and was well separated from the unoxidized peak . Among them, it can be concluded that the peak area fraction of peroxide has a linear relationship with the POV in the sample, and the influence of the fatty acid composition in the sample is such that the higher the degree of unsaturation, the smaller the slope. The amount of peroxides per peak area fraction can be obtained by separately extracting the components of the three peaks of glycerol glycerides. Based on this, the corrected peak area fraction can be calculated and studied in relation to the POV. As a result, it can be confirmed that they do not have the same linear relationship with the change of the fatty acid composition of the fat. Using this line as a calibration curve, the POV of various auto-oxidized oils was determined by HPLC analysis to be in good agreement with the POV measured by potentiometric titration.
