所谓春茶,一般是指立夏前采制的新茶。春茶具有芽头肥壮,叶质柔软,茸毛多等特征,而且在香气、滋味等方面都优于夏茶。夏茶一般是指立夏后萌发生长的芽叶制成的茶叶,夏茶芽小叶薄,叶质硬脆,苦涩味重,香气低短,无论从外形或内质上,春夏茶两者都存在着显著的差异。正确识别春夏茶是茶叶审评工作的基本知识之一,只有掌握这方面的知识,准确无误地识别春夏茶,才能做到合理给价。本人结合在茶叶收购中的实践,谈一谈肤浅的认识。
