芡实,为睡莲科一年生水生草本植物芡的成熟种仁。芡,深绿色的叶浮在水面,紫色肉质的花形如鸡冠。花落后长出的浆实为海绵质,如鸡头,故又名鸡头米、鸡头果,还有雁头,鸿头之称。芡实在我国有南北之别,其中以苏州黄天荡的最负盛名,其子色白肉糯,为我国传统的出口商品。北芡又称池芡,苏北洪泽湖及高宝湖一带所产较好,但较南芡逊色。芡实是人们喜食的节令果品,也是
