研究了蒜苔的气调冷藏方法,制订了初步的技术措施,沈阳市已以此替代了传统的冰窖贮藏法。蒜苔的贮藏适温为0℃,不能受冻,并应力求库温稳定。气调措施目前采用聚乙烯薄膜袋封闭,自然降 O_2,适时放风。在每个放风周期内,应使 O_2含量在1~3%至18~20%之间大幅度变动,CO_2相应地变动在12~15%至1~2%之间。蒜苔在一定期限内能忍耐 O_2<1%、CO_2>15%的条件,但会造成后遗症,从而增大贮藏中、后期的损耗。袋封法不能创造最适宜的气调环境,且放风工作量很大。对此试验了一些改进措施,见到一些效果,还存在问题,有待继续研究。
