本文分析了越冬期与繁殖前期乌鳢肌肉的营养成分,鱼肉中粗蛋白含量在越冬期为28.21%,显著高于繁殖前期。所测的七种必需氨基酸含量占氨基酸总量的38.72%。通过与其它鱼类营养成分的比较,表明乌鳢是一种高蛋白、低脂肪、营养丰富的经济鱼类。
In this paper, the nutritional content of Mussels in the overwintering and pre-breeding stages was analyzed. The crude protein content in fish was 28.21% in wintering period, which was significantly higher than that in pre-breeding season. The measured seven essential amino acids accounted for 38.72% of the total amino acids. By comparison with other fish nutrition components, it shows that it is a high protein, low fat and nutritious economic fish.
