目的初步了解郑州市售坚果中铅、砷、汞、镉4种有害元素的污染状况,为有关部门加强监管提供科学依据。方法从郑州市超市和农贸市场随机采集各类坚果168份,采用石墨炉原子吸收光谱法测定样品中的铅和镉,原子荧光光谱法测定砷和汞,并按照GB 2762—2012《食品安全国家标准食品中污染物限量》、NY/T 1042—2014《绿色食品坚果》对检测结果进行评价。结果 168份样品中,铅、砷、汞、镉的检出率分别为53.0%、31.0%、19.0%、63.7%,合格率分别为96.4%、98.8%、100.0%、91.1%,含量的平均值分别为0.036 mg/kg、0.031 mg/kg、0.830μg/kg、0.050 mg/kg。花生、葵花籽中铅、砷、镉的含量较高;各类坚果中汞的含量较低。结论郑州市售坚果中有害元素的含量总体较低,但部分产品存在不同程度的污染,应引起重视,加强监管,确保坚果的质量安全。
Objective To understand the pollution status of 4 kinds of harmful elements such as lead, arsenic, mercury and cadmium in Zhengzhou market and to provide the scientific basis for the relevant departments to strengthen their supervision. Methods 168 samples of nuts were randomly collected from supermarkets and farmers’ markets of Zhengzhou City. Lead and cadmium were determined by graphite furnace atomic absorption spectrometry. Arsenic and mercury were determined by atomic fluorescence spectrometry. According to GB 2762-2012 “Food Safety Country Limit of Contaminants in Standard Foods ”, NY / T 1042-2014“ Green Food Nuts ”to evaluate test results. Results The detection rates of lead, arsenic, mercury and cadmium in the 168 samples were 53.0%, 31.0%, 19.0% and 63.7%, respectively, with the passing rates of 96.4%, 98.8%, 100.0% and 91.1%, respectively Values were 0.036 mg / kg, 0.031 mg / kg, 0.830 μg / kg and 0.050 mg / kg, respectively. Peanuts, sunflower seeds lead, arsenic, cadmium content is higher; various types of nuts in the mercury content is low. Conclusion The content of harmful elements in commercial nuts in Zhengzhou is generally low, but some products have different levels of pollution, which should pay attention to strengthen the supervision and ensure the quality and safety of nuts.
