目的分析金槐桂G9-2槐米的营养与有害成分含量,为其进一步开发利用提供参考。方法采用国标方法,测定槐米中氨基酸、矿物元素和有害重金属含量,同时对有机氯农药残留量、黄曲霉毒素B1含量等进行分析。结果金槐桂G9-2槐米含有18种氨基酸,必需氨基酸总量(WEAA)33.14mg/g,非必需氨基酸总量(WNEAA)50.16mg/g,氨基酸总量(WTAA)88.44mg/g。氨基酸评分(AAS)、化学评分(CS)、氨基酸指数(EAAI)分别为6.93、5.23、53.758。WEAA/WTAA37.47,WEAA/WNEAA66.07%,鲜味氨基酸总量占氨基酸总含量33.45%;K和Ca元素含量丰富,P和Mg含量也相对丰富,微量元素Fe的含量远高于同类食品中的含量;有害重金属、黄曲霉毒素B1和有机氯农药残留量低于允许量。结论金槐桂G9-2槐米氨基酸种类齐全,氨基酸总量较高,绝大部分必需氨基酸含量符合联合国粮农组织/世界卫生组织(FAO/WHO)模式,矿物质含量丰富,具有良好的经济价值和开发前景。
Objective To analyze the contents of nutrition and harmful components of Jinhuai Gui G9-2 Huai Mi, providing references for its further development and utilization. Methods The contents of amino acids, mineral elements and harmful heavy metals in S. japonica were determined by the national standard method. Meanwhile, the residues of organochlorine pesticides and the content of aflatoxin B1 were analyzed. Conclusions There are many kinds of amino acids in A. japonicum G9-2, and the total amino acids are high.
