目的研究和评价甘肃省市售谷物制品铅和镉污染调查及健康风险状况。方法采集14个地(州)市的小麦粉、大米、玉米粉(碴)3类主要的消费食物,共计851份样品,其中小麦粉369份、大米283份、玉米粉(碴)199份。调查谷物制品重金属铅、镉的含量。利用目标危害系数法(THQ)和危害指数(HI)评价谷物制品对成人和儿童带来的潜在健康风险。结果甘肃省市售谷物制品中铅、镉的平均含量依次是0.047、0.015 mg/kg,其中小麦粉和玉米粉(碴)中的铅有超标现象,总体超标率为1.3%。居民通过谷物制品摄入的重金属铅、镉THQ和HI均小于1,不会造成当地成人和儿童的健康风险,其中重金属暴露对儿童的健康风险明显高于成年人。结论甘肃省市售谷物制品质量良好,没有明显的重金属健康伤害,但部分地区的小麦粉和玉米粉(碴)中铅污染不容乐观。
Objective To study and evaluate the pollution of lead and cadmium in cereal products and health risk in Gansu Province. Methods A total of 851 samples of wheat, rice and maize meal (ballast) were collected from 14 prefectures and cities, including 369 parts of wheat flour, 283 parts of rice and 199 parts of corn meal (ballast). Investigation of heavy metal lead and cadmium content in cereal products. Conclusion The quality of grain products marketed in Gansu Province is good and there is no significant health hazard of heavy metals. However, the lead pollution in wheat flour and corn meal (ballast) in some areas is not optimistic.
