饮食与人类的关系至为密切,深入、全面地研究内涵丰富的中华传统饮食礼俗,无论是对深化研究中国社会生活史,还是对拓展中国传统文化研究的领域,都是一件十分有价值的事情。姚伟均博士的新著《中国传统饮食礼俗研究》(以下称《研究》,华中师范大学出版社1999年9月版)便在中国传统饮食礼俗研究方面作了一些积极的、有益的探讨。全书21万余言,共10章,揭示了从“茹毛饮血”的远古时代至明清时期中国饮食礼俗在各个历史阶段的发展及嬗变,涉及到民间饮食、宫廷饮食、佛道饮食诸方面的内容,全面地层现了社会不同阶层与群体的饮食方式、饮食风尚、饮食礼仪等,系统地勾勒出中国古代饮食礼俗的面貌及演变的轨迹。
