目的通过对一起食物中毒事件发生原因的分析,探讨餐饮卫生监督管理现况。方法通过对食物中毒26例引起患者进行病因、临床症状、流行病学及实验室检测和卫生学等调查,提出对现阶段食品卫生监督管理的看法。结果 26位患者发病前同时参加同一喜庆宴席,在患者粪便中副溶血弧菌检测阳性,酒楼厨房的生砧板也检出副溶血弧菌。结论此事件是由于进食了受副溶血性弧菌污染的食品引起食物中毒事故,与监督管理薄弱有一定关系。
Objective To analyze the causes of a food poisoning incident and discuss the status of food hygiene supervision and management. Methods Twenty-six cases of food poisoning caused by the etiology, clinical symptoms, epidemiology and laboratory tests and hygiene survey, put forward the views on the current food hygiene supervision and management. Results Before the onset of the disease, 26 patients also took part in the same festive banquet. Vibrio parahaemolyticus was detected positive in the excrement of the patients and Vibrio parahaemolyticus was also detected in the raw chopping board of the restaurant kitchen. Conclusion This incident is caused by food poisoning caused by food contaminated by Vibrio parahaemolyticus, which is related to the weak supervision and management.
