笔者于1986~1987年对金樱子(Rosa laevigata Michx)、红子[Pyracantha fortune-ana(Maxim)]果实生长期和贮藏期营养成分含量及其变化测定的结果表明:Vc含量开始逐渐增高,至盛花期后金樱子193天、红子163天达最高值,以后含量均大幅度下降;糖含量在生长期是递增趋势,红子果实从盛花期后188~195天,金樱子果实从盛花期后158~168天含量达最高值,以后增加不多;酸含量两者随果实成熟而逐渐减少;单宁含量两者均先增后减,果实从盛花期后金樱子1.49天,红子144天达最高值,以后均微有减少;金樱子、红子果实在生长期过氧化物酶、多酚氧化酶、抗坏血酸氧化酶、过氧化氢酶等酶活性随果实生长而下降;果实在贮藏期Vc含量迅述下降,四种氧化酶活性也比生长期有所下降,但仍比刺梨高,尤以红子氧化酶活性为刺梨的70多倍,使Ve损失严重。
