花生、花生油、玉米及棉籽饼等易被黄曲霉毒素所污染。它们在栽培、收获、贮存、运输与加工各阶段中,若不注意防霉,则很可能产生黄曲霉毒素。在气候炎热潮湿的地区,含有高水份的一些粮谷与食品很易被黄曲霉所污染,而且很快就产生毒素。因之对食物与饲料中黄曲霉毒素的去毒方法应探讨研究。本文拟就国外在黄曲霉毒素的毒性评定与去毒方法方面作一简单介绍。毒性的评定
Peanuts, peanut oil, corn and cottonseed cake easily contaminated with aflatoxin. They are likely to produce aflatoxins if they are not mold-protected at all stages of cultivation, harvesting, storage, transport and processing. In hot and humid climates, some grains and foods that contain high moisture are easily contaminated with Aspergillus flavus and quickly produce toxins. Therefore, the detoxification of aflatoxins in food and feed should be explored. This article is intended to make a brief introduction on the methods of aflatoxin toxicity assessment and detoxification in foreign countries. Toxicity assessment
